Chocolate Chip Muffin Recipe

 

Muffins:

Muffin is the name given to two types of breadstuffs. Most commonly it refers to a baking powder or baking soda raised item that is often flavored with various fruits, chocolate, nuts, and bran. In the United Kingdom, "muffin" can refer to both this type of muffin, or sometimes to what the rest of the world calls an English muffin.

Origin of Muffins:

The "quick" muffin is an American development from the 19th century, made possible by the invention of baking powder. This muffin is a thick, flat bun typically about 8 cm in diameter.. In modern practice, it almost always has a "topping" baked in, such as blueberries or chocolate chips. It is usually split into two, toasted and buttered, and bears a vague resemblance to a crumpet or pikelet. It also is eaten cold with a hot drink at coffee shops and diners.

Chocolate Chips:

.Chocolate chips are small chunks of chocolate. They are often sold in a round, flat-bottomed teardrop shape. They are available in numerous sizes, from large to miniature, but are usually around 1 cm in diameter.

Chocolate Chips Muffins Recipes:

1.Chocolate Chip Zucchini Muffins or Bread:

Ingredients:

3 eggs

1 c. vegetable oil

2 c. sugar

2 tsp. vanilla

2 c. shredded zucchini

1 (1 1/4 c. crushed pineapple, drained)

3 c. all purpose flour

2 tsp. baking soda

1/4 tsp. baking powder

1 tsp. salt

1 1/2 tsp. cinnamon

3/4 tsp. nutmeg

1 c. chocolate chips

1 c. chopped walnuts

Preparation:

Combine eggs, oil, sugar, vanilla; beat until smooth and thickened. Stir in zucchini and well drained pineapple, flour, soda, baking powder, salt, spices. Fold in chocolate chips and nuts.

Spread batter in 2 greased 9 x 5 x 3 loaf pans or in muffin cups, filling cups to about 1/2 full. Bake loaves at 350 degrees 1 hour or until wooden toothpick comes out clean. Bake muffins at 350 degrees for 20 minutes.

2.Favorite Pumpkin Chocolate Chip Muffins:

Iingredients:

Make 1 or 2 days ahead for best flavor.

1 2/3 c. whole wheat flour

1 c. sugar

1 tbsp. pumpkin pie spice

1 tsp. baking soda

1/4 tsp. baking powder

1/4 tsp. salt

2 lg. eggs

1 c. plain pumpkin (half of 1 lb. can)

1/2 c. (1 stick) melted butter

1 c. (6 oz.) chocolate chips

Mix dry ingredients in large bowl. In another bowl whisk until well blended: eggs, pumpkin and butter. Stir in almonds and chocolate chips. Pour over dry ingredients and fold in until just moistened. Bake 20 to 25 minutes or until puffed and springy to tough. Grease muffin cups or use paper baking cups. Bake at 350 degrees for 20 to 25 minutes.

Makes 12 regular or 48 miniature.

3.Lemon Chocolate Chip Muffins:

Ingredients:

1 med.-size lemon, well scrubbed and wiped dry

1/2 c. unsalted butter at room temp.

1 c. plus 4 tsp. granulated sugar

2 lg. eggs

1 tsp. baking soda

2 c. all-purpose flour

1 c. plain buttermilk or yogurt

3/4 c. (5 oz.) semi-sweet chocolate chips

1/4 c. fresh lemon juice

Preparation:

Heat oven to 375 degrees F. Grease 12 regular size or 24 miniature (1 3/4 inch diameter muffin cups) or line with foil or paper.

4.Chocolate Chip Cookies Muffins:

Ingredients:

1 can sweetened condensed milk

2 c. graham cracker crumbs

1 c. pecans

1 c. mini chocolate chips

Preparation:

Mix all ingredients together and place in muffin cups and bake in mini muffin pan for 10 minutes. If cooked too long, they will stick to the paper cups.

5.Peanut- Chocolate Chip Muffins:

Ingredients:

1 egg

2 c. Bisquick

1/2 c. nuts

1/3 c. sugar

2/3 c. milk

2 tbsp. vegetable oil

1/2 c. chocolate chips

Preparation:

Beat egg and add other ingredients. Grease bottoms only of 12 muffin tins. Pour in tins and bake until golden brown, 15 to 18 minutes at 400 degrees.

6.Chocolate Chip Muffins:

Ingredients:

1 egg

1/2 c. milk

1/4 c. salad oil

1 1/2 c. Gold Medal flour

1/2 c. sugar

2 tsp. baking powder

1/2 tsp. salt

1 c. (more or less) chocolate chips

Preparation:

Heat oven to 400 degrees. Grease bottoms of 12 medium muffin cups. Beat egg; stir in milk and oil. Mix in remaining ingredients just until flour is moistened. Batter should be lumpy.

Fill muffin cups 2/3 full. Bake 20 to 25 minutes or until golden brown. Immediately remove from pan.

7.Pumpkin Chocolate Chip Muffins:

Ingredients:

1/2 c. (1 1/2 oz.) sliced, unblanched almonds

1 2/3 c. all-purpose flour

1 c. granulated sugar

1 tbsp. pumpkin pie spice

1 tsp. baking soda

1/4 tsp. baking powder

1/4 tsp. salt

2 lg. eggs

1 c. plain pumpkin (1/2 to 1 lb. can)

1/2 c. (1 stick) butter, melted

1 c. (6 oz.) chocolate chips

Preparation:

Heat oven to 350 degrees. Put almonds on baking sheet or pie pan and bake about 5 minutes, just until lightly browned; watch carefully so almonds don't burn. (You can also toast them in a toaster oven.) Slide almonds off baking sheet so they cool quickly. Grease muffin cups or use foil or paper baking cups. thoroughly mix flour, sugar, pie spice, baking soda, baking powder and salt in large bowl. Break eggs into another bowl. Add pumpkin and butter, and whisk until dry ingredients are moistened. Scoop batter evenly into muffin cups. Bake 20 to 25 minutes or until puffed and springy to the touch in center. Turn out onto rack to cool. Wrap in plastic bag. Keep 1 or 2 days. Reheat before serving. Makes 12 regular or 48 miniature muffins.

8.Chocolate Chip Muffins:

Ingredients:

1 pkg. chocolate chip cookie mix

Preparation:

Mix according to box directions. Press into miniature muffin tins and bake according to box directions.

9.Pumpkin Chocolate Chip Muffins:

Ingredients:

2 c. sifted flour

2 tsp. baking powder

1 tsp. baking soda

1/2 tsp. salt

1 1/2 tsp. cinnamon

1/2 tsp. cloves

1/4 tsp. allspice

1/4 tsp. ginger

2 c. sugar

4 eggs, beaten until foamy

1 (1 lb.) can pumpkin

1 c. vegetable oil

1 c. bran buds cereal

1 (6 oz.) pkg. chocolate chips

1 c. chopped nuts

Sift together flour, baking powder, baking soda, salt, cinnamon, cloves, allspice, ginger and sugar. Combine remaining ingredients and mix with sifted ingredients. Fill cake pans or muffin tins and bake at 350 for 45 minutes.

10.Chocolate Chip Muffins:

Ingredients:

2 1/4 c. flour

2 1/2 tsp. baking soda

1 tsp. salt

1 tbsp. white vinegar mixed with milk enough to make 1 cup liquid

Beat together in bowl:

1 c. softened butter

1 c. brown sugar

1/2 c. sugar

2 tbsp. vanilla

3 eggs

Miniature morsels

Preparation:

Then add flour, soda and salt. Mix together and add 1 (12 ounce) package of mini-morsels chocolate chips. Let set in bowl for a few minutes. Use muffin papers in muffin pan.

Bake at 375 degrees for about 15 to 20 minutes. Can make 30 small or 18 large. If large - bake longer. Can be frozen.
